Whitney—one of my roommates from college—made this sometimes, and I loved it! I've never been able to make it as tasty as she did, but here's the jist. It's not the most gourmet meal, but I love it because it's so easy! (It's not the healthiest meal in the world either, but it could be worse, right?)
Ingredients:
- Tortillas (6-12)
- 1 chicken breast diced and cooked (or 1 can pre-cooked chicken)
- 1 28 oz. can fat free refried beans
- 1-2 small cans green chilies
- 10 oz. fat free sour cream (more or less to taste)
- Reduced fat ranch dressing to taste (Last night I used at least 3 big squirts. I've used the ranch seasoning packets before, because it's healthier. It works, but it doesn't taste as good. Wonder why? ;))
- Season salt to taste
- Combine all ingredients except tortillas in a large bowl. Stir.
- In a 9x9 inch baking dish (or most any other size—it doesn't really matter), layer a thin amount of the bean mixture.
- Add a layer of tortillas on top of the bean mixture.
- Repeat steps 2 and 3 a few times, finishing with the bean mixture on top.
- Heat in the oven or just microwave your portion.
- Top with anything you want—salsa, cheese, tomatoes, lettuce—or eat it by itself. (At 4 a.m. this morning it tasted great cold with tortilla chips.)
If you'd like, you can add pretty much anything to the refried bean mixture—olives, taco seasoning, sauteed onion, garlic cloves, tomatoes, mashed black or pinto beans, jalepenos, etc.
